How are you all doing? Hope you are enjoying summer while it is still here. Now that we are so close to the end of it, feeling nostalgic is normal. That urge to indulge once more in the warmer weather and fresh outdoors is all too familiar for us. Everyone goes through it. Perfectly normal. After all, who wants to squeeze themselves into tons of layers just to step outside? No one, right?
But we can fancy all we want. The fact still remains- Summer is almost over. Though Fall is my favorite season, it also means, Winter is not far behind. I will stop thinking at that point. I don’t want to think about winter yet.
Instead I am thinking lemonade. Yup, Blueberry Lemonade! This sweet and tart homemade lemonade is made with a scratch-made blueberry simple syrup. This particular blueberry lemonade recipe is so easy to make. It is also a refreshing summertime drink that will help you deal with summer withdrawals like a champ, I promise!
Homemade Blueberry Lemonade
1/2 cup Imperial Sugar Extra Fine Granulated Sugar
1 cup blueberries + ½ cup for freezing
3/4 cup freshly squeezed lemon juice
Lemon slices for garnish (optional)
Start by freezing ½ cup of fresh blueberries to use as ‘ice cubes.’ It looks beautiful, and it won’t water down the lemonade.
To make the blueberry simple syrup, combine sugar and 1 cup water in a medium saucepan over medium heat. Stir until the sugar has dissolved.
Add in 1 cup of blueberries and bring to a boil; reduce heat and simmer until blueberries are soft, about 3-4 minutes. Strain blueberry mixture through a fine sieve; let cool.
In a large pitcher, whisk together blueberry simple syrup, lemon juice and 5 cups water. Refrigerate for 1 hour until chilled.
